SNICKERDOODLE CHEESECAKE BARS
Serves 15

INGREDIENTS

Crust
15 graham crackers, crushed
4 tablespoons butter, melted

Cheesecake Filling
16 ounces cream cheese, softened
¾ cup sugar
⅓ cup sour cream
1 teaspoon vanilla extract
2 eggs

Cookie Topping
¾ cup butter, softened
1 ½ cups sugar
1 egg
1 teaspoon vanilla extract
Pinch of salt
1 ½ teaspoons baking powder
½ teaspoon cinnamon
2 cups flour
Cinnamon and sugar

PREPARATION
1. Preheat oven to 350°F/180°C.
2. In a bowl, mix the crust ingredients. Press into the bottom of a greased 9×13-inch baking dish.
3. In another bowl, mix the cream cheese, sugar, sour cream, and vanilla.
4. Add the eggs one at a time, mixing thoroughly. Spread over the graham cracker crust.
5. In another bowl, the butter and sugar for 2 minutes until creamy.
6. Add the egg and vanilla and mix thoroughly.
7. Add the dry ingredients and mix until crumbly. Press handfuls of the dough into discs, and lay over the cheesecake filling, reserving 1 cup of dough to sprinkle over the top.
8. Bake for 35 minutes, cool completely, and refrigerate for at least 4 hours.
