今天有我的客家妈妈来分享我外婆的私房食谱-酿葡萄干酒。自小都吃喝着外婆料理,总觉得有种难以言喻的美味。原来很多菜肴都有加入葡萄酒来做调料。想着自己现在当个美食博主,一定要趁这个机会把这家族的私房食谱记录起来也跟大家分享我们家的好滋味。

???? 准备时间 :1天
???? 酿造时间 :3个月
????️ 份量 :2公升

????食材
– 1 公斤 葡萄干 (https://shope.ee/10NcJVxghs)
– 1 公斤 冰糖 (https://shope.ee/79yFf0EVM1)
– 3 公升 水
– 5 粒 甜酒饼 (https://shope.ee/5f9Rra5ykq)
– 5 粒 辣酒饼

????‍????做法
1. 把玻璃瓮清洗干净晒干。也把买回来的酒饼和葡萄干各自晒干确保没有湿气就可以。
2. 把冰糖放入锅子加入水煮溶晾凉1天。
3. 酒饼擀碎后倒入玻璃瓮里。
4. 葡萄干用凉开水洗两遍后直接放入玻璃罐里。
5. 倒入冰糖水后放上盖子就好,别关紧。
6. 放在阴凉和方便照看到的位置就可以了。
7. 三天后看见所有葡萄干浮起来了,用干净无水的勺子就翻拌一下盖上盖子。
8. 再隔3天后继续同样翻拌的步骤。
9. 最后再一次翻拌是1个月后,所以总共只翻拌3次而已。翻太多次酒会变酸和味道不佳。
10. 继续静置到满3个月的收成期,用勺子把葡萄酒尧出来过滤掉葡萄干装入玻璃罐里。
11. 可以直接饮用或者用来煮菜都很美味。

❤️小贴士
1. 若要继续酿造到1年或更久就放着就好了,只是水分会随着时间和气温蒸发而酒会更浓缩。

– 3L Water
– 5 pcs Sweet Dried Yeast Balls (https://shope.ee/5f9Rra5ykq)
– 5 pcs Spicy Dried Yeast Balls

????‍???? INSTRUCTIONS
1. Clean the glass urn and dry it. You also need to dry the dried yeast balls and raisins separately to ensure that there is no moisture.
2. Put the rock sugar in a pot, add water to boil, and let it cool for 1 day.
3. After crushing the dried yeast balls, pour them into a glass urn.
4. Wash the raisins twice with boiled room temperature water and put them directly into the glass urn.
5. Cover the lid after pouring in the rock sugar water, don’t close it tightly.
6. Put it in a shaded and easy-to-see place.
7. After three days, you will see all the raisins floating, use a clean and dry spoon to stir well and cover the lid.
8. Continue the same stirring steps after another 3 days.
9. The last time to stir again is 1 month, so it is only 3 times in total. Stirring the wine too many times will make it sour and taste bad.
10. Continue to brew until the harvest period of 3 months, use a cup to scoop out the wine and filter out the raisins and fill it in a glass jar.
11. It is delicious to drink directly or to cook.

❤️ Tips
1. If you want to continue brewing for 1 year or more, it is fine, but the water will evaporate with time and the wine will be more concentrated.
