Red Sangria
One 750-milliliter bottle fruity red wine, such as Merlot 4 ounces brandy 3 ounces Simple Syrup 1 cup mixed chunks of seeded oranges, lemons and limes Ice

Poached Eggs with Red Wine Sauce
2 cups water 1/4 cup veal demiglace (such as D’Artagnan) 2 cups of dry red wine (such as Burgundy) 1 cup chopped tomato 2 shallots, thinly sliced (about 3/4 cup) Bouquet garni: 5 flat-leaf parsley sprigs, 1 thyme sprig, and 1 fresh bay leaf, tied securely with butcher’s twine 1 (6-ounce) bacon slab, cut into 1/2-inch cubes (about 1 1/4 cups) 1 teaspoon unsalted butter, softened 1 teaspoon all-purpose flour 1/8 teaspoon kosher salt 1/8 teaspoon black pepper 8 poached eggs 8 white bread slices (such as Pepperidge Farm), cut into 3-inch rounds and sautéed in butter and oil until browned 2 tablespoons finely chopped fresh flat-leaf parsley

Roast Chicken Cacciatore with Red Wine Butter
One 3 1/2-pound chicken Kosher salt 5 thyme sprigs 1 cup red wine 2 tablespoons tomato paste 2 tablespoons unsalted butter, softened 4 basil sprigs, plus leaves for garnish 4 oregano sprigs 3 garlic cloves, crushed 1 small fennel bulb, cut into 3/4-inch wedges through the core 1 cup cherry tomatoes 3/4 cup pearl onions 8 jarred sweet Peppadew peppers, halved 6 baby bell peppers, halved lengthwise and seeded 1 tablespoon extra-virgin olive oil 1/2 cup chicken stock 1/2 cup Castelvetrano olives, pitted and chopped

Red Wine Chocolate Snack Cake
1/2 cup unsalted butter (4 ounces), melted, plus more for greasing 1 1/4 cups all-purpose flour (about 5 5/8 ounces) 1/3 cup unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon kosher salt 1 cup granulated sugar 1 large egg, at room temperature 1 cup Cabernet Sauvignon, at room temperature 1 teaspoon pure vanilla extract
GANACHE:
1 (3-ounce) semisweet chocolate baking bar, finely chopped 2 tablespoons cold unsalted butter, diced 1 tablespoon light corn syrup 1/4 cup powdered sugar, sifted 2 tablespoons Cabernet Sauvignon, warmed Flaky sea salt
