Oak barrels for wine are seasoned through air drying. The oak staves can then be treated in a hot water immersion to leach out astringency prior to being toasted over a fire. Winemaker Brianne Day filmed the seasoning process at Tonnellerie Saury near Bordeaux, France and shared this view with Ask a Winemaker.
