A lagar is a traditional Portuguese tank carved our of granite and used for crushing and fermenting grapes into wine. Sara Dionisio at Casa de Mouraz explains how they use a lagar to produce a wine from the Douro Valley. Very few examples of wine made in a lagar exist and it is a rare treat to understand how it works.
