Ingredients:
100ml White Wine
3 Eggs (egg yolk only)
50g Sugar
Strawberries as needed
Raspberries as needed
Cranberries as needed
Physalis as needed
Preparation:
Separate the eggs, use only the yolk and mix it with the sugar. Combine the mixture with a stirrer over a warm water bath and slowly add the white wine into it. The volume has to increase till fluffy.
Take 4 martini glasses and add all the fruits in there (except physalis) and fill up with the beaten egg mix and then slightly burn the surface for colour. Top the dessert with a physalis and a little icing sugar if you like. Enjoy!
