Today we worked on stuffing and cooking quail. This is a delicious and easy protein to make. Next, we worked on many different base recipes to use for aperitivo snacks. Aperitivo is a big tradition in Italy where you have a cocktail along with food.

The day wouldn’t be complete without learning about wine in culinary school. Today we did a food pairing analysis where we learned what flavor pairings go along with different types of wine.
