SECRETS OF. WINE TASTING:
Classes begin with a wine expert (sommelier), telling about each of the drinks that we will taste. After a short introduction, the cork is sniffed – if the smell is too intense, the wine will smell like it, such alcohol is not suitable for tasting and should be poured out. Then the drink is poured into glasses, usually deep, on a high stem, but we can meet the approach that in some wineries a different type of glass will be served for each wine. We always hold the glass by the stem, thanks to which we do not heat it and leave no traces on it. We shake the wine in the glass vigorously, releasing its aroma. The slower the drops flow, forming the so-called “crown”, the stronger the wine. Alcohol has a perceptible density, tangible viscosity. Too much alcohol causes a burning sensation in the mouth, while too little alcohol makes the wine feel diluted. We look closely at the color. In the case of white wine, the more intense the color, the older the wine. With red wine it is exactly the opposite, a dark red color means a young wine, and a slightly amber color – an older one. The next important step is to smell the wine. We learn to distinguish between smells: in white, these are usually fruits (apples, pears, mangoes), flowers, and in red, forest fruits, cherries, figs. There is a smell of wood from the barrel in which it was kept.
Finally, we come to the most important and enjoyable part: tasting the wine. We sense the taste, temperature, acidity and alcohol strength. We check whether we like the taste of alcohol – the longer it stays in the mouth, the better it is. It is worth trying a few times, because what does not suit us at first, after a while can become quite good. This is the moment when we can clearly determine whether the wine tastes good to us. Remember that taste is a personal matter and what we like will not necessarily be the taste of others.
Wine should bring joy – anytime, anywhere and to everyone. Nothing related to this drink – quality, price, region of origin, grape variety – matters as much as whether we like the wine and whether we drink it with pleasure.
