How do winegrowers decide it’s time to harvest grapes? Jon Bowen of Domaine Sainte Croix in Corbieres in the Languedoc region in the South of France tells us he tastes a lot of grapes to see their component parts: flesh, berries, seeds and juice. Each will tell him something different and each variety demands different attention.
