Coq au vin is a very traditional French dish. In the days when most people lived rural lives and more than likely kept chickens and other beasts, they could easily get hold of a coq – a cockerel or rooster. It would be tough and scraggy and need a good long cook to make it tender. These days, of course, we use a chicken. The dish was made popular by Julia Child who included it in her book and made it twice on her TV show. The dish was picked up by restaurants and fancified a bit, but basically coq au vin is a jointed chicken cooked in wine with onions, mushrooms and bacon. It’s very simple and tasty.
