What is hot pot? Hot pot is an Asian method of cooking food where raw ingredients are boiled in hot water or soup stock. It is very healthy and communal and while it may sound bland, the food can be flavored by adding sauces or flavoring the liquid you are boiling the food in.

Hot pot is very popular in Asian cultures to celebrate winter festivals like the Winter Solstice or the Lunar New Year. Wine pairing is challenging since there is a multitude of food you can use in hot pot and sometimes the liquid is spicy.

So I thought I would give my advice on what wines to pair with hot pot or spicy foods. Hope you enjoy!
