Welcome to part 3 of Make It Mini with @bon__abbetit! This series reimagines trending recipes using Le Creuset Mini Cocottes. Next up: A take on the viral jam and seltzer. This version has an oven-roasted peach and raspberry jam paired with lime seltzer, and tastes similar to a muddled fruit cocktail or mocktail. Here’s how to make it:

Ingredients:
½ tbsp butter
3 tbsp sliced peaches (with the skin removed)
A small handful of raspberries
A little less than half a lime + wedges for serving
3 tbsp white sugar
1 tsp chopped mint
A sprinkle of Pectin
1 can of lime seltzer

1. Preheat oven to 375F. Coat a Mini Cocotte in butter and add in your fruit. Add lime juice and sugar and let macerate. Bake for about 9 minutes.
2. Remove from oven and add in mint and pectin. Stir to make sure it’s combined, then bake again for about another 5 min. Remove from oven and let cool, then transfer to a jar. The jam should thicken quite a bit once it has cooled.
3: When ready to serve, add lots of ice to a Le Creuset wine glass. Add a hefty tablespoon of jam to the glass. Pour a lime seltzer overtop. Stir and add a lime wedge to the glass. Serve and enjoy on a hot summer day!
4. Optional/bonus: This drink is perfect on its own, or great as a cocktail if you add your alcohol of choice (drink responsibly, ages 21+).
