I run through one of my favourite French classics Coq au Vin.

Coq au vin Ingredients

1kg / 2lbs Chicken thighs (Bone in)
12 peeled shallots
200g / half a pound of smoked lardons / chopped fatty bacon
250g / 9oz of mushrooms (cut in quarters if large) + butter to sauté the mushrooms
500 mls / 2 cups of red wine
250ml / 1 cup chicken stock (I used a stock cube & water)

3 garlic cloves or 2 tablespoons of dried garlic
1 teaspoon pepper
1 teaspoon thyme
2 teaspoons of mixed herbs (Herbs de Provence)

To Chicken
2 tablespoons cornflour
2 tablespoons butter
